Artisans with a passion for cheeses. The cheese factory is located within the agrarian company owned by the Agricultural Technical Institute of Todi, the oldest in Italy and was founded 25 years ago by a former student of the institute, Riccardo Marconi who, after completing his studies, decided to embark on this adventure. We process 3 types of milk: bovine, ovine and caprine, always paying the utmost attention to the choice of the quality of the raw material. We produce about 70 types of cheeses, from the freshest to the most seasoned; an entire line is dedicated to lactose intolerant, even celiacs can safely enjoy all our cheeses, as gluten free, they do not contain any foreign element to milk (preservatives, dyes, bleaches, stabilizers, anti-mold, etc..), if you want you can even eat the skin!
