The salumificio (charcuterie) is located in San Venanzo (TR) at the foot of Monte Peglia, in an area of high Umbrian hills. The company was founded in 1960 by Elpidio Rossi called "Moro", father of the current owner David as a classic family-run butcher shop. When in 1982, David Rossi took over the company, it was especially oriented towards pork products, using selected raw materials, experimenting with new products and personalizing processing phases. The fundamental characteristic of this company is the strictly "artisan" processing of high quality products in respect of the tradition handed down from father to son. In 1990, a growing demand for delicatessen products, pushed David Rossi towards the first expansion: the company was equipped with larger rooms for the various stages of processing and in 1994 the store was extended and completely renovated. In 2001, the company became a limited liability company where, in addition to the owner, his wife and two sons, there is a staff of six employees in full harmony with the family nucleus. In 2010, on the occasion of the 50th anniversary of its foundation, David Salumi inaugurated a new laboratory used exclusively for the processing of cold meats. This new laboratory is immersed in the green countryside of Monte Peglia, located about 600 meters from the center of town and integrates perfectly into this environment. In addition to a non-invasive construction, the structure is surrounded by large green spaces. An eco-compatible establishment devoted to energy saving.
