The importance of sweet wine is often underestimated. Italian sweet wines offer a vast variety of choices between red sweet wine and white sweet wine .
It often happens to put so much care into finding the right combination between the dishes of our menu and the wines, but then for the final course we do not dedicate an equal commitment and we limit ourselves to propose a «dry spumante».
In reality the dessert is a dish that has the same value as all the others and deserves equal attention in choosing the dessert wine (liqueur, dessert, sparkling wine …) to pair with it.
Meanwhile, let’s dispel the myth that desserts are good with dry sparkling wines, there is nothing more wrong; the basic principle of pairing wines with desserts states that “a dessert must always be paired with a sweet wine “.
Making a pairing food-wine is certainly not easy: it is a combination of technical knowledge (of the characteristics of the dishes and the properties of the wine but also of the classic pairing methods) and creativity. The operation does not have the simple purpose of finding a wine that “tastes good” with the dish but of harmoniously blending the two elements and creating a new taste sensation.
Food-wine pairings occur by contrast or by analogy, the latter being simpler to do, the contrast requires a careful evaluation of both food and wine and the effects that the components of the wine cause when they encounter food. To choose the wine to accompany dessert you always have to follow the analogy criterion.
