The company was born in 2001 in Contrada Salmé, where the Calì family owns a great deal of land since over three centuries. This area represents one of the best Sicilian microterritories for the production of ancient and native red grapes, such as Frappato and Nero d’Avola, cultivated since the time of Greeks, when the ancestor of Cerasuolo di Vittoria was produced, the so called Mesopotamium wine, and nowadays they are the basis of six of the seven labels produced.
The project developed by the business is agronomical: during few years have been planted 15 hectares with Organic vineyards, in a perfect balance among the traditional cultivation techniques (from honing to pruning up to the grape harvest by hand in small plastic boxes). There has been, also, a process of renovation of the blocks before in existence during which, thanks to little “archeoenological” discoveries, an ancient millstone fallen into disrepair over the centuries has been found, becoming the seat of a cellar equipped with up-to-date technologies, from maceration, to fermentation, to aging and bottling, all done inside the company, to keep unchanged the quality of the wine.
With the careful experimentation in vineyards and in cellar we produce the wines Paolo Calì, always in search of best potential of the grapes cultivated in this plot of land. The scents you smell in Paolo Calì’s wines come from the sea sand, becoming from prehistorical sea dunes, at 189 meters of altitude above sea level.
